How To Treat It
- Look for firm, tightly packed stalks with no discoloring or spotting. The ribs should be crisp enough to break easily
- Make sure there is no signs of wilting and the stalks have a vibrant green color.
- Store it in the crisper drawer of the refrigerator for up to a week.
How To Cook With It
Celery is often used as a filler veg or a base for a recipe. It contributes enormously to forming a first layer or flavour in many dishes, and is part of the essential trio that makes up the mire poix (French), or soffritto (Italian). Celery's delicate sweet flavour is also robust enough to stand out as the centrepiece in some dishes.
Crisp, light and refreshing. It's amazing in soups, sauces, salads and can be eaten either raw or cooked. Cooking celery brings out the sweetness and eliminates its slight bitterness.
