Roasted Beet Salad With Avocado Dressing And Goat Cheese

Fresh, nutritious, textured, colourful and beyond easy.

This is the kind of salad that is exactly the type of dish to serve for dinner company or everyday meal. It adds some needed freshness to any spread, and it looks so striking, but it’s delightfully simple to make.

The roasted bits of beet that get beautifully caramelized with honey are a match made in heaven. We like using fresh spring lettuce mix and  crunchy walnuts for texture, contrasted with creamy house-made avocado dressing and tangy goat cheese. We chose the Paillot De Chevre Goat Cheese for it's firm yet creamy texture and tangy flavor. 

For a sophisticated presentation we recommend serving this salad on a platter.

Serves 4-6 

6 Pickled Ontario Beets
3 Tbsp Honey, optional
6 cups mixed salad, rinsed and dried
1 package (125g) Paillot De Chevre Goat Cheese
1/2 cup walnuts, or candied pecans

Roast the beets
Preheat the oven to 375˚F. Line the bottom of a medium rimmed baking sheet with foil.
Cut the pickled beets into bite size chunks and toss in 3 tablespoons of honey.
Roast for 15-20 minutes until the beets are slightly caramelized.

Assemble the salad
Spread the salad mix over a large platter then scatter over the remaining ingredients: beets, goat cheese, and nuts.
Drizzle liberally with Avocado Vinaigrette. Serve and enjoy.
